White Chocolate Almond Dried Fruit Biscotti

We had so much fun cooking and baking over Christmas. Last year we made biscotti, and it was such a great hit that we decided to do it again this year! We made three different kinds, one of which we invented, which was super fun! The recipe is below. 

White Chocolate Chocolate Almond Apricot Biscotti
Ingredients:
2.5 cups flour
1 teaspoon baking soda
1 teaspoon salt
6 Tablespoons unsalted butter, softened
1 cup sugar
2 eggs
2 teaspoons vanilla 
1 teaspoon almond extract
2 Tablespoons amaretto
3/4 cup salted almonds (roughly chopped)
3/4 cup white chocolate chips
3/4 cup dried fruit (we used cut up apricots)
Egg wash (1 egg mixed with 2 Tablespoons cream/whole milk)

Instructions:
Preheat oven to 350. Prepare a baking sheet with parchment paper. Beat together butter and sugar. Add eggs and beat together. Add vanilla, almond extract, and amaretto, and combine. Add flour, baking soda, and salt. The dough should be stiff. Mix in almonds, white chocolate chips, and dried fruit. Divide dough in half and create two logs on the baking sheet (about 12 inches long and 2 inches wide). Brush on the egg wash. Bake for 30 minutes. Remove from oven and use a spray bottle to spray with water. Let cool for about 10 minutes. Transfer to a cutting board and cut 3/4 inch slices. Put slices back on the baking sheet and bake for an additional 10 minutes... or until they reach the texture you would like!
